Gajim supports only Jabber, I believe, whereas both of the other 
contenders are multi-protocol.

Also, when I stress tested all three a few¹ years ago, Neither Gajim nor 
Empathy - only Pidgin - could handle my Jabber roster of 1000+ friends.

So unless for some specific² needs, I recommend Pidgin.

¹ As I recon it must've been 2-3 years ago: It was before Facebook 
blocked public access to their ejabberd servers but after my first 
journey to India and Indonesia in 2011 where I got ~1000 "friends".

² One reason might be security concerns - Pidgin is famous for being 
sloppily coded, and even though it does have an off-the-record plugin 
some security folks recommend against using that - but they then 
recommend none the other Jabber clients but instead some less federated 
chat system than both Jabber and irc.  So it all depends on the aim.
